The watercress microgreen is the young seedling of watercress (Nasturtium officinale), cut at the cotyledon-to-first-true-leaf stage roughly one to three weeks after sowing. It delivers the plant's clean, sharp, peppery-mustardy bite in a tiny, tender package, and is used almost exclusively raw as a finishing garnish or a salad green.
These cues are Watercress's, and hold across its varieties; where this one differs, its own page says so.
