Water buffalo is the meat (and, just as importantly, the milk) of the domestic water buffalo, Bubalus bubalis — the great swamp- and river-dwelling bovid of Asia. The flesh is a very lean, deep-red meat eaten across South and Southeast Asia, the Mediterranean and the Near East, while the rich, white milk is the traditional source of true buffalo mozzarella.
