Water is the ingredient every kitchen uses most and thinks about least. It carries heat, dissolves salt and sugar, hydrates flour, draws out and carries flavour, and makes up the bulk of nearly everything else on the shelf. On its own it should taste of almost nothing — but "almost nothing" is not nothing, and what is dissolved in it is what distinguishes one water from another.
