Voatsiperifery pepper is a rare wild peppercorn, the sun-dried fruit of Piper borbonense, a climbing pepper vine native to the rainforests of Madagascar. Smaller and more irregular than black pepper, and often carrying a slender tail like cubeb, it is prized by chefs for a warm, moderate pungency wrapped in an unusually floral, citrusy and resinous perfume — notes of wild flowers, fresh wood and orange peel — that has made it one of the most sought-after "gourmet" peppers in the world.
