Valençay is a soft, ash-coated French goat cheese from the Berry region, instantly recognised by its shape: a flat-topped, truncated pyramid dusted in slate-grey vegetable ash. Made from raw or pasteurised goat's milk, it is bright lactic and nutty with a delicate "goaty" tang, and it carries protected AOC/PDO status.
