Vacherin Mont d'Or (also sold as Mont d'Or, and as Vacherin Mont-d'Or in Switzerland) is a soft, washed-rind cow's-milk cheese from the Jura massif that straddles the French–Swiss border. It is a seasonal, wintertime cheese, girdled by a strip of spruce bark and ripened in a round spruce box, both of which lend it a distinctive resinous, woodland fragrance. When ripe its wrinkled, undulating amber rind gives way to an interior so soft it is scooped or poured out with a spoon — a spoonable cheese quite unlike the firm mountain wheels of the same region.
