Vacherin Mont d'Or is a soft, washed-rind cow's-milk cheese from the Jura massif straddling France and Switzerland, made only in the cold months and famous for being girdled in a band of spruce bark and sold in a thin spruce box. Beneath a wavy, salmon- to-amber washed rind the paste turns so soft and runny when ripe that it is eaten with a spoon, with a rich, woody, balsamic flavour from the conifer that holds it.
