Urfa biber (also isot or isot biberi) is a Turkish dried red chile from the region around Şanlıurfa, ground into coarse dark purple-black flakes by a distinctive sweat-and-sun curing that traps oils and leaves the pepper raisiny, smoky and only moderately hot.
