Ume (Prunus mume), often translated "Japanese plum" or "Japanese apricot," is the small, round, intensely sour stone fruit of an East Asian flowering tree more closely related to the apricot than the plum. Almost never eaten raw, it is salted into umeboshi, brewed into the liqueur umeshu, or pressed into vinegars and syrups.
