Ulluco (Ullucus tuberosus) is a small, brilliantly coloured stem tuber grown high in the Andes, one of the most important traditional root crops of the region after the potato and oca. Its glossy skin runs through yellow, pink, red, purple and magenta — often candy-striped — over a waxy, crunchy flesh that stays firm in cooking and never quite goes floury.
