Tzatziki is the cold yogurt sauce of Greece and Cyprus, made by folding grated, salted and squeezed-dry cucumber and plenty of raw crushed garlic into thick strained yogurt, then seasoning it with olive oil, an acid such as lemon juice or vinegar, salt and fresh dill or mint. Cool, tangy, creamy and sharply garlicky, it is served as a meze dip, a spread for warm pita and a spooned-over sauce for grilled meat, above all gyros and souvlaki.
