Tuxedo
The Tuxedo is a classic dry-Martini variation from the Gilded-Age Tuxedo Club near New York — gin and dry vermouth in equal measure, lifted with a touch of maraschino liqueur, orange bitters and a whisper of absinthe, stirred and strained up. Pale straw-gold and bone dry, it is a fragrant, aromatic cousin of the Martini, softened just slightly by the cherry sweetness of the maraschino and perfumed by anise.

Pale straw-gold and crystal clear, the Tuxedo smells of dry juniper and pine from the gin, the wine-like herbal lift of dry vermouth, a nutty cherry-pit sweetness from the maraschino and a fragrant orange-zest note, all threaded with a faint, haunting anise perfume from the dash of absinthe. On the palate it is bone dry and aromatic — only lightly sweetened by the small pour of maraschino — with a pungent botanical bite, a whisper of woody spice and a clean, dry, lingering finish at around 28 percent alcohol in the glass. It is lighter and more perfumed than a Martini yet unmistakably in the same bracing, appetite-opening family.
