Turkish delight

Confection

Turkish delight, known in Turkish as lokum, is a soft, chewy gel confection made by cooking sugar with starch and water into a translucent, springy paste, then flavouring it — most iconically with rosewater — and cutting it into cubes rolled in powdered sugar. It is the quintessential sweet of the Ottoman table, served in small squares with strong coffee across the Middle East, the Balkans and beyond.
