The cheek is the round, scallop-shaped muscle set into each side of a tuna's head — known in Japan as hoho-niku ("cheek meat") — that works the jaw. Two per fish and small, it is dense yet tender, with a firm, meaty, scallop- or veal-like bite: mild, clean and comparatively lean, and prized as one of the fish's "rare cuts."
