Tuna are large, fast, warm-blooded ocean predators of the genus Thunnus, sold as deep-red to pink loins and steaks of dense, meaty flesh. Mild, clean and faintly metallic raw — the prized fish of sashimi and seared rare steaks — it firms and pales to a chicken-like flake when cooked, and is the world's most-canned fish.
