Țuică / Pălincă

Țuică is the plum brandy of Romania, distilled from fermented ripe plums and drunk as the country's great national spirit, poured to welcome guests and to open every feast; its stronger, twice-distilled cousin from Transylvania and the north-west is called pălincă, running clearer and fiercer. A pure orchard eau-de-vie bottled unaged and dry, it leads with warm, jammy plum and a faint bitter-almond kiss from the fruit stone, and stands apart from Hungarian pálinka and Balkan slivovitz as Romania's own.

by taste profile
Dry, warming and fruit-forward, țuică leads with jammy stewed plum and prune, unmistakably the fruit it is made from, laced with the faint bitter-almond and marzipan note of the plum stone that marks a well-made spirit. Around it sit dried fruit, a whisper of florals and, in wood-rested bătrână bottlings, vanilla, honey and oak spice over the plum. The texture is spirituous and full, with a warming alcohol burn that runs from gentle in the mild single-distilled southern țuică to fierce in the twice-distilled Transylvanian pălincă, and the finish is dry, long and gently almondy, softening and rounding with time in cask.
