Truffle oil is a culinary oil — usually olive or a neutral seed oil — carrying the pungent, garlicky-earthy aroma of truffle. It is used as a finishing oil, drizzled over pasta, risotto, eggs, fries and pizza off the heat to lend a luxurious truffle note for a fraction of the cost of the fungus itself. The great majority of truffle oil on the market is aromatised not with real truffle but with a synthetic flavour compound, 2,4-dithiapentane.
