Trinidad Sour
The Trinidad Sour is a modern-classic cocktail built around a startling idea — a full ounce and a half of Angostura aromatic bitters used not as a dash but as the base spirit. Shaken with orgeat, fresh lemon juice and a small pour of rye whiskey and strained up into a coupe, it is a deep red-brown, aromatic sour that is nutty, spiced and tart-bittersweet, and one of the few celebrated drinks to make bitters the star.

Deep garnet-to-brick in colour, the Trinidad Sour smells of clove, cinnamon and gentian-driven baking spice over a marzipan-like sweetness of almond orgeat, with a spicy rye lift and a squeeze of fresh lemon oil. On the palate it is tart and bittersweet at once — the orgeat's nutty sweetness leads, the lemon slices through with bright acidity, and the extraordinary dose of Angostura carries a long, spiced, faintly bitter finish. Despite the intimidating amount of bitters it drinks smoothly and aromatically at around 14 percent alcohol in the glass.
