The San Marzano is an elongated plum (paste) tomato prized as the benchmark cooking tomato — thin-skinned, meaty and low in seeds, with a flavour balanced toward sweetness and deep savoury richness rather than the bright acidity of a salad tomato. The protected-origin fruit grown in the volcanic soils south of Mount Vesuvius is the classic sauce tomato of Neapolitan cooking and authentic Naples-style pizza.
