Kumato is a trademarked brown tomato, a small-to-medium round fruit that ripens not to red but to a deep mahogany-brown shading to dusky green, eaten at exactly that dark colour rather than left to turn red. Bred from a dark wild Mediterranean line and grown almost entirely under glass, it is sold for a noticeably sweeter, more intense and slightly tangy flavour and a markedly higher sugar content than an ordinary tomato.
