Tiger-nut milk

Tiger-nut milk is a creamy, pale-beige plant drink made by soaking, grinding and straining tiger nuts (chufa) — the small, sweet tubers of the sedge Cyperus esculentus — into a naturally sweet, nutty, dairy-free liquid. Known as kunun aya in West Africa and as orxata or horchata de chufa in Spain, it is drunk ice-cold as a refreshment and, unusually among plant milks, tastes sweet without any added sugar.

A cold glass of lightly sweetened tiger-nut milk reads first as sweet, nutty and gently almondy over a soft, milky-creamy body, with a faint earthy-tuber edge and a light, slightly starchy texture rather than true fat-richness; the natural sweetness of the chufa carries it without much added sugar, and West African kunun aya versions add warmth from ginger, dates or coconut.
