Tequila Anejo

Anejo (the Spanish for aged) is tequila that has rested one to three years in oak, where the bright, peppery fire of fresh agave spirit slows and rounds into something amber and smooth — all warm vanilla, caramel, dried fruit and baking spice. It is the contemplative end of the tequila family, a sipping spirit poured neat into a snifter or copita and savoured slowly, much as one would a fine whisky or cognac, rather than shot with salt and lime.

An amber spirit of about 38 to 40 percent alcohol with a warming alcoholic heat and a gentle peppery pungency, rounded by oak ageing into something smooth and faintly sweet. Vanilla and caramel drawn from the wood lead over dried fruit, toasted oak and cinnamon-clove spice, with the earthy cooked-agave core of tequila still showing beneath. Drier and more earthy than aged rum, it has a long, mellow, woody finish built for slow sipping neat or over a single large ice cube.
