Tepache

Tepache is a lightly fermented Mexican drink built from pineapple peel and core, sweetened with piloncillo (unrefined cone sugar) and spiced with cinnamon and clove. Cloudy, amber and gently fizzy, it is sweet-tart and only mildly alcoholic — somewhere between a soft drink and a young cider — and is sold ice-cold by street vendors across Mexico, sometimes splashed with a little beer or chile.

Poured cold over ice, tepache leads with bright ripe-pineapple aroma over warm cinnamon and clove, tastes sweet and tart at once with a fizzy prickle, and finishes faintly cidery and tangy from its light wild fermentation; piloncillo lends a soft molasses depth underneath.
