Teff

Teff is the worlds smallest cereal grain, a fine-seeded Ethiopian and Eritrean lovegrass whose poppy-seed-sized kernels are milled whole into a mineral-rich, naturally gluten-free flour and fermented into injera, the spongy, sour pancake-bread at the centre of the Horn-of-Africa table.
