Micro tatsoi is the microgreen of tatsoi (Brassica rapa subsp. narinosa) — the spoon-mustard rosette green cut at roughly one to three weeks old, when the seedling is only a few centimetres tall with its seed leaves and the first small true leaves. Tender and faintly succulent, it concentrates the mature plant's mild, sweet, gently mustardy flavour into a single delicate shoot eaten raw.
