Tatsoi is an Asian mustard green (Brassica rapa subsp. narinosa) that grows as a low, ground-hugging rosette of small, dark-green, spoon-shaped leaves. Mild, slightly mustardy and faintly sweet, it is eaten raw in salads and added at the very end of stir-fries, soups and noodle dishes.
What to look for, from tight rosette, dark and glossy to yellow, limp, slimy at the stalks.
