Tara gum is a plant galactomannan milled from the seeds of the tara tree, used as a thickener and stabiliser. It sits chemically between guar and locust-bean gum, giving it both useful cold-water thickening and the ability to form a gel in partnership with xanthan or carrageenan — with no flavour of its own.
