Tapioca is the purified starch extracted from the storage roots of cassava (Manihot esculenta), a tropical shrub native to South America. Naturally gluten-free and almost pure carbohydrate, it is sold as fine flour, flake, irregular flour-pearl and the round "pearls" that swell into chewy spheres — most famously the boba of bubble tea.
