Sugar substitute

Tagatose is a "rare sugar" — a low-calorie monosaccharide that looks, dissolves and browns much like table sugar yet delivers only about a third to a half of its calories. A white, free-flowing crystalline powder, it tastes roughly 90% as sweet as sucrose with a clean, sugar-like profile and, unusually for a low-calorie sweetener, no cooling effect and no bitter or metallic aftertaste.
