Tabil is a foundational Tunisian spice blend built on coriander seed, caraway, garlic and dried red chilli — its name comes from the Tunisian Arabic word for "seasoning" (and, more narrowly, for coriander itself). Coarsely ground and often sun-dried, it is the everyday aromatic backbone of Tunisian stews, sausages and vegetable dishes, and the seasoning that gives merguez much of its character.
