Micro chard is Swiss chard (Beta vulgaris) harvested as a microgreen — a tiny seedling only 5–10 cm tall, cut about one to three weeks after sowing once its first true leaves appear. Eaten raw as a vivid garnish or salad green, it pairs jewel-toned white, gold, pink and crimson stems with a concentrated, sweet-earthy beet-leaf flavour.
These cues are Swiss chard's, and hold across its varieties; where this one differs, its own page says so.
