Suze is a French bitter aperitif built on the root of the yellow gentian, a bracing, bittersweet liqueur first shown at the 1889 Paris World's Fair by the distiller Fernand Moureaux. Pale gold to greenish-yellow in the glass, it leads with an earthy, root-cellar gentian bitterness lifted by candied citrus, dried herbs and a rounding sweetness, and is bottled at a gentle 15% ABV across Europe (20% for the British market). It is drunk classically over ice with a lemon twist or lengthened with tonic or soda as a low-strength apéritif, and it is the gentian backbone of the White Negroni, where it stands in for Campari alongside gin and Lillet.
