The surf clam is a large, fast-burrowing saltwater bivalve of sandy surf-zone seabeds, named for the pounding breakers it lives beneath. Its broad, sweet foot and adductor muscle are the prize — minced into chowder and fried strips in North America, and famous in Japanese sushi as hokkigai, where the slender orange-purple foot tips the rice.
