Sulguni (Georgian sulguni) is a moist, springy, moderately salty brined cheese from the Samegrelo (Mingrelia) region of western Georgia. Made by the pasta-filata "spun-paste" method from cow's or buffalo milk, it comes in flat round discs, layers into supple leaves, and melts into long, elastic, ropy threads — which is why it is the cheese of choice for khachapuri, the Georgian cheese-filled bread.
