Sujeonggwa

Sujeonggwa is a traditional Korean punch — a chilled, dark reddish-brown infusion of cinnamon bark and fresh ginger, sweetened with sugar or honey and floated with a few pine nuts and softened dried persimmon. Spicy-sweet and bracingly aromatic, it is drunk cold and most often as a dessert, prized as a cooling, palate-cleansing close to a rich meal. It is non-alcoholic and caffeine-free, and although now enjoyed year-round it carries strong associations with the Korean Lunar New Year and the winter holiday table.

A cold bowl of sujeonggwa leads with warm, sweet cinnamon and the bright, peppery bite of ginger over a frankly sweet, clean body; the finish is gently pungent and faintly woody, with a soft fruity note from soaked dried persimmon and a whisper of nutty richness from the floated pine nuts. It is light in texture, more aromatic punch than syrup, and reads as a spiced, cooling close to a meal.
