Sucrose esters are sugar-based emulsifiers made by joining ordinary table sugar to fatty acids. Their special trick is range: by changing how many fatty acids are attached, they can be tuned from water-loving to oil-loving, so a single family of additives can emulsify sauces, whip stable foams and aerate batters — all at a fraction of a percent and with little or no flavour of their own.
