Sucralose is a heat-stable, high-intensity artificial sweetener made by selectively chlorinating sucrose. Best known under the brand name Splenda, it tastes about 600 times sweeter than table sugar, adds essentially no calories, and — unusually for a non-nutritive sweetener — holds up in baking and cooking.
