Sturgeon are large, ancient bottom-feeding fish of the family Acipenseridae — armoured with rows of bony plates rather than scales, prized both for their firm, meaty white flesh and as the source of true caviar. The genus Acipenser holds most of the commercial species, swimming in the rivers, lakes and coastal seas of the Northern Hemisphere.
