Stracchino, also called crescenza, is a soft, fresh cow's-milk cheese from northern Italy — pale ivory, almost rindless, and spreadably creamy with a gentle lactic tang. Young and unaged, it is eaten within days, spread on bread, melted onto warm focaccia or stirred into polenta, where its mild, milky sweetness and slight acidity come to the fore.
