Sriracha is a smooth, pourable hot sauce of ripe red chillies, garlic, sugar, salt and vinegar, ground to a thick paste and famous for its bright tomato-red colour and the green rooster on the squeeze bottle. Unlike a thin vinegar hot sauce, it is dense and glossy, with a tangy-sweet, garlicky bite and a building-but-manageable heat. Named for the seaside town of Si Racha in eastern Thailand, it has become a near-universal table condiment, squeezed onto everything from pho and fried eggs to pizza and french fries.
