Springbok is the meat of the springbok (Antidorcas marsupialis), the small, fleet gazelle of the South African veld and the country's national animal. Prized above all African plains game, it is very lean, fine-grained and dark ruby-red, with a firm bite and a clean, sweet, gently herbal "gamey" flavour; because it carries almost no fat it dries out fast, and is best served rare to medium or slow-braised — most famously as the Cape stew potjiekos.
