Sotol
Sotol is the state spirit of Chihuahua in northern Mexico, distilled not from agave but from the Dasylirion plant, the desert spoon or sereque of the Chihuahuan Desert; earthy, herbaceous and green with a cool minty edge, it swings across a wide terroir range from grassy and vegetal to leathery and mineral, and though it is often shelved beside mezcal and made much the same way, its wild high-desert succulent gives it a leaner, wilder, more herbal character all its own.

Earthy, herbaceous and green, sotol leads with fresh grass, cut herbs and a cool minty, eucalyptus lift over a mineral, dusty-desert base, with pepper, pine and a faint leathery, funky depth in wilder bottlings. It is generally less smoky than mezcal, cleaner and greener, though pit roasting can leave a whisper of woodsmoke; the body is light to medium with a warming alcohol edge at around 38 to 45 percent, and the finish is dry, herbal and mineral, turning softer and vanilla-tinged in oak-aged bottlings. Terroir dominates, so a single distillery's expressions can range from bright and grassy to dark and leathery.
