Micro sorrel is the seedling stage of common sorrel (Rumex acetosa), harvested as a microgreen one to three weeks after sowing, when the plant is just a pair of cotyledons and the first true leaves on a slender stem. Tiny, tender and vividly green — red-veined types show crimson midribs against the leaf — it carries the mature plant's bright lemon-sour tang in a far more concentrated, delicate package, used raw as a finishing garnish and a sharp accent leaf rather than cooked.
These cues are Sorrel's, and hold across its varieties; where this one differs, its own page says so.
