Soft caramel

Confection

Soft caramel is the chewy, cream-and-butter caramel candy — the tender amber square that stretches when you bite it rather than snapping like hard toffee. Made by boiling sugar, glucose or corn syrup, cream and butter together to the soft- or firm-ball stage and cooling the mixture into a pliable sweet, it tastes of warm caramelised sugar, butter and cooked milk. Wrapped individually or cut into blocks, it appears plain, salted (fleur-de-sel caramels), or as the flowing centre of countless chocolates and candy bars.
