Snapper, and above all the northern red snapper (Lutjanus campechanus) of the Gulf of Mexico and the western Atlantic, is a prized reef fish with rosy-red skin, red-rimmed eyes and lean, firm, sweet white flesh. Mild and faintly nutty, the tight-grained meat holds its shape on the grill and roasts beautifully whole, which has made it a star of Veracruz, Caribbean and Gulf Coast kitchens — and one of the most notoriously mislabelled fish in the world.
