Spirit
Slivovitz
Slivovitz is the plum brandy of Central and Eastern Europe and the Balkans, distilled from fermented blue Damson plums and drunk as the great national fruit spirit of the region, above all of Serbia; a type of rakia bottled clear or matured amber in wood, it runs strong and dry with a deep, jammy plum body and a distinctive bitter-almond kiss from the fruit stone.

Dry, warming and fruit-forward, slivovitz leads with jammy stewed plum and prune, unmistakably the fruit it is made from, laced with the faint bitter-almond and marzipan note of the plum stone that marks a well-made sliva. Around it sit dried fruit, a whisper of florals and, in wood-aged bottlings, vanilla, honey and oak spice over the plum. The texture is spirituous and full, with a warming alcohol burn that runs from firm at 40 percent to fierce in the strong homemade batches, and the finish is dry, long and gently almondy, softening and rounding with time in cask.
