Skyr is a traditional Icelandic cultured dairy product — technically a fresh, strained soft cheese, though it is eaten and sold like a thick yogurt. Mild, slightly tart and spoonably dense, it is prized for being very high in protein and almost fat-free when made from skimmed milk.
