Shrub

A shrub is a sweet-tart drinking vinegar: a concentrated syrup of fruit, sugar and vinegar that is diluted with cold water or soda to make a bright, refreshing, non-alcoholic drink. Sharp and fruity, cooling and thirst-quenching, it is a colonial-era way of preserving ripe fruit as flavour that has been revived as both a soft drink and a cocktail mixer.

by taste profile
A shrub over soda hits first as bright, jammy fruit — raspberry, berry or stone fruit — lifted immediately by a sharp, clean vinegar tang that makes the mouth water; the balance is frankly sweet-and-sour, fruity and puckering at once, with a fizzy, juicy lightness and often a faint warmth of ginger or spice trailing behind. Well diluted it drinks refreshing and savoury rather than syrupy.
