Shropshire Blue is an English blue cheese made from pasteurised cow's milk, instantly recognisable for its deep orange-amber paste shot through with sharp blue-green veins of Penicillium roqueforti. Made much like a Stilton, it is dyed with annatto, giving a striking colour contrast and a slightly sharper, more piquant flavour than its pale cousin. Despite the name it has no historical connection to the county of Shropshire.
