Shad is a large, deep-bodied river herring of the genus Alosa — most famously the American shad (Alosa sapidissima), whose species name means "most savory." An anadromous fish that runs from the sea into freshwater rivers to spawn, it is prized for its rich, oily flesh and especially for its delicately flavored roe.
